Sambar Podi is the most important ingredient in making sambar.Only if the sambar podi is good, the sambar would taste well.As the sambar ia made up of toor dal,we need not add too much dals(urad dal,channa dal,toor dal) while preparing sambar podi.Too much of dal in the podi makes the sambar very thick like a porridge.So,reduce the dal while making sambar podi or completely omit them.Follow these simple steps and make your own homemade Sambar Podi.
2 cups coriander seeds
1/2 cup cumin seeds
1-2 tsp pepper
1-2 tsp fenugreek seeds
1/2 tsp asafoetida
15-20 dried red chillies
1 tsp channa dal
2 tsp sesame oil
Heat 1 tsp oil in a kadai,add coriander seeds and roast for 3 mins in simmer flame,once you start getting the smell of the seeds add the red chilies and curry leaves and roast in simmer flame till they become crisp,this would take another 3-5 mins and keep this aside.
Heat another 1 tsp of oil in kadai add cumin seeds,pepper,fenugreek,channa dal (optional) and roast for 5 mins in simmer flame.
Mix everything together and cool the mixture.
Grind them in a mixture with asafoetida.
Homemade Sambar podi is ready for preparing sambar.
