INGREDIENTS
4 turnips ( chopped)
1 onion (chopped)
1 tomato (chopped)
1 & 1/2 cups of coconut milk
2 tsp chilli powder
1/2 tsp turmeric powder
1 tbsp oil
Salt to taste
MASALA ITEMS TO TEMPER
1/2 tsp saunf
2 star anise
2 small cinnamon stick
1 bay leaf
3 cloves
TO GRIND
5 cashews
2 inch long piece of ginger
5 cloves garlic
1/2 tsp saunf
METHOD
Wash and peel the skin of the turnips,chop them and keep it aside.
Grind the items under ‘to grind’ column
Heat oil in a pan, add all the masala items and saute for a minute.
Add onions and saute for 2 mins on medium flame then add the tomatoes and saute for 3 mins on medium flame.
Add turnips and saute for 3-5 mins on medium flame,stir occasionally.Now add the ground mixture to the sauteed veggies.
Add the coconut milk,turmeric powder,chilli powder,salt and bring it to boil.Stir well so that the mixture spreads all through the veggies.
Transfer this to a cooker and cook on high flame for 2 whistles,then reduce to low flame and cook for 5-8 minsmins.Open the lid when the pressure is released completely.Let the kurma stay on low flame for 5 more mins without the lid so that the oil separates and the kurma becomes thick.
Delicious Turnip Kurma is ready to serve
