Purple Cabbage is rich in color and nutrients.It has very low calorific value thus good for dieters.As they have high water content ,add little water while cooking to preserve the nutrients or just sauteing is enough to cook them.
INGREDIENTS
1 & 1/2 cups purple cabbage(chopped)
1 onion (chopped)
1 tbsp moong dhal
2 green chillies
2 tsp grated coconut
1 tsp urad dhal
1 tsp mustard seeds
1 tbsp oil
Few curry leaves
Salt to taste
METHOD
Boil moong dhal and cabbage with little water and salt for 5 mins on simmer flame.Drain the water and keep it aside.
Heat oil in a pan add mustard seeds ,urad dal ,curry leaves when it splutters add green chilies,onions and saute for 2 mins.
Switch off the flame.Now add the cooked cabbage ,moong dal and grated coconut.Mix them well.
Purple Cabbage kootu is ready to serve.
