Pulaos are made with basmati rice and vegetables of our wish.There are many varieties of pulaos in India.Lets make them with peas using coconut milk following simple steps with pictures.
INGREDIENTS
1 cup basmati rice(soak for 10 min in warm water)
1/4 cup peas
1 onion (chopped)
2 green chillies (slit)
1/2 cup coconut milk
A fistful of mint leaves (chopped)
A fistful of coriander leaves (chopped)
4 cashews
2 tsp ginger garlic paste
Salt to taste
Oil
MASALA ITEMS
2 green cardamoms
1 star anise
2 cloves
1 small piece of cinnamon
1/2 tsp fennel seeds
METHOD
Heat oil add masala items,green chillies,cashew nut and saute for a min in simmer flame.
Add onions and ginger garlic paste saute till onions turn transparent.
Add coconut milk,water 1 1/2 cups ,peas,mint leaves,coriander leaves,salt and let it boil.
When it boils add the rice and boil in higher flame,when the rice is seen on the layer close with a lid and turn the flame to simmer.
Switch off the stove when the rice is cooked.Peas pulao is ready to serve,serve it with Onion Raitha.
