Sambar is a popular South Indian food especially in Tamilnadu.Very healthy food with dal and vegetables thus provides the proteins and vitamins.I make them twice a week for it is very simple ,easy and healthy as well.Such an unique dish that goes well with all three meals.Lets make this simple dish with drumsticks and carrots following simple steps with pictures.
INGREDIENTS
1 cup Toor dhal
1 carrot
1 drumstick
15 shallots
2 tomato medium size
A fistful of coriander leaves chopped(garnishing)
2 tbsp tamarind juice(1/2 gooseberry sized)
1/4 tsp turmeric powder
1-2 tsp sambar powder
1 chilli powder
2 tbsp sesame oil
Salt to taste
TO TEMPER
1/4 mustard seeds
1/4 urad dhal
1/4 cumin seeds
1/4 fenugreek seeds
Few curry leaves
A generous pinch of asafoetida
METHOD
Soak dal in water for half an hour then add turmeric powder and pressure cook for 2 whistles.
Heat oil in a pan add the items for tempering when they splutter add the onions and saute till they become transparent.Then add the vegetables and tomatoes and saute for 5 mins in medium flame.
Now transfer the contents from the pan to the cooked dal add chilli powder,sambar powder,salt .Let them boil insimmer flame for 10 mins or till oil separates on top ,do not pressure cook them.
When the oil separates add tamarind juice,coriander leaves give a stir and switch off the stove.
