Tomato Briyani is prepared using basmati rice with tomato pulp instead of chopped tomatoes.One of my favorite briyani,would become your favourite as well if you make them.
INGREDIENTS
2 cups basmati rice
7 ( made into pulp) tomatoes
2 onion chopped
Juice from a lemon
2 tsp chilli powder
1 tsp tumeric powder
3 tbsp oil
Salt to taste
TO GRIND ( 1)
A small piece of cinnamon
1/2 tsp fennel seeds
2 cloves
1 cardamom
1/2 star anise
TO GRIND (2)
3 or 4 inch ginger
10-15 cloves garlic
Mint leaves fistful chopped
Coriander leaves fistful chopped
TO TEMPER
2 cloves
1/2 star anise
A small piece cinnamon stick
1/2 tsp fennel seeds
7 cashews
2 black or green cardamom
3 green chillies
1 bay leaf
METHOD
Heat oil,then simmer the flame and add the items under( to temper) .Add onions and saute until they become transparent. Meanwhile soak the basmati rice in warm water for 15 mins.
Add the grinded mixtures 1 and 2,cook for 5 mins in medium flame.
Measure the tomato pulp,for 1 cup rice add 1 cup pulp and one cup water.
Add turmeric powder,chilli powder and salt.Let it to boil in high flame.
When it boils add the rice in high flame.Meanwhile heat an empty dosa tawa on medium flame in the other burner.
When you could see the rice on top ,close it with a lid andsimmer the flame for 5 mins.
After that 5 mins ,add the lemon juice.
Now place this briyani vessel on top of the dosa tawa for dum process.Let it stay on dum for 5 mins in simmer flame and then switch off the stove and do not open the lid for 15 mins.
Yummy ,Tangy Tomato Briyani is ready to serve.
