Mushroom Briyani is the tastiest of all Veg briyani.Mushrooms add tastes and flavour to the briyani.There s not much vegetables cutting needed except a few onions and tomatoes.So,definitely a quick and an easy one pot meal that can be made in few mins.Lets make them following simple steps with pictures.
INGREDIENTS
1 cup basmati rice
10-15 nos button mushroom
1 onion chopped
1 tomato chopped
2 green chillies slit
1 tsp chilli powder
1/2 tsp turmeric powder
1 tbsp oil
MASALA ITEMS
1/4 tsp fennel seeds
1 clove
1/2 star anise
1 black or green cardamom
A small piece cinnamon stick
TO GRIND 1

1 clove
1 cardamom
TO GRIND 2
1 inch long ginger
6 cloves of garlic
A fistful of mint leaves (chopped)
A fistful of coriander leaves (chopped)
METHOD
Soak the basmati rice in warm water for 10 mins ,after 10 mins drain the water and keep in aside.
Clean the mushrooms and chop them.
Heat oil in a heavy bottomed vessel,reduce to simmer flame and add the masala items.
After a min add the green chillies and onions and saute till the onions turn transparent.
Then add tomato and saute for 3 mins.Then add the mushrooms and saute for 2 mins.
Add chilli powder,turmeric powder,salt and the grinded mixture 1 and saute for 5 mins in simmer flame.
When oil separates,add the grinded mixture 2 and saute for 2 mins.
Now add the measured water and give it a boil in high flame,when it boils add the rice.
When the rice is seen on top, close it with a lid and reduce to simmer flame for 5 min.
Then switch off the stove and do not open the lid for 20 mins.
Delicious Mushroom Briyani is ready to serve.Serve hot with onion raitha.
