Karuppatti Aapam is very famous in my native town Virudhunagar(Tamil Nadu).It is made with aapam batter and palm sugar.Palm sugar is rich in vitamins ,minerals and amino acids.Replacing white sugar with palm sugar helps to postpone the onset of diabetes and reduce weight.A very sweet ,coloured aapam which can be consumed without sugar and coconut milk.A good breakfast for dieters.Lets make them with simple steps and pictures.
INGREDIENTS
Aapam batter 2 cups(refer my link for aapam batter)
Palm sugar 200 grams
Sodium bicarbonate a small pimch
Chopped coconut 1 tbsp
Roasted cashews 10
Ghee 1 tbsp
METHOD
Prepare a thick Aapam batter with less water and ferment it.Take the palm sugar and break them into small pieces.
Boil the palm sugar in half a cup of water and simmer in lower flame for 5 mins to obtain thick palm sugar syrup.Then filter the syrup in stainless steel filter and discard the residue.
Add the chopped cocounuts,roasted cashews,palm sugar syrup and mix them well to get karuppatti aapam batter.
Pour 1-2 tbsp of the batter in the centre of the aapam chattti or kadai and rotate to spread the batter all over the surface of the kadai.
Add 1/4 tsp of ghee and close it with a lid.Open the lid when the aapam is cooked in the centre and browned at the edges.Remove from the kadai.
The Aapam should have a basket shaped structure with soft centre part and lacy,netted periphery region.
Serve the Karuppatti Aapam hot.
