Szechuan sauce is a bright coloured sauce made from dried red chillies and used in the Chinese cuisine.Very easy to make them at home and tastes great than the readymade sauce for the store bought sauce have lot peservatives in it.
15 dried red chillies
5 garlic pods
1 inch size of ginger
1/2 tsp pepper
1/2 tsp salt
1 tbsp sesame oil
Wash and soak the red chillies in hot water for half an hour.Grind the red chillies,ginger,garlic to a fine paste with little water.
Heat sesame oil in a pan,pour this mixture in it add pepper and salt.Cook for 5-10 mins in simmer until the raw smell goes off.
Cool the sauce,store in an airtight container and refrigerate.
Bright coloured Szechuan sauce is ready to use.
