Szechuan chicken fried rice is made by adding szechuan sauce ,shredded chicken,scrambled egg to the ordinary fried rice.An Indo chinese recipe healthy and tasty too.
1 cup basmati rice
1 carrot chopped
1/2 capsicum chopped
1 small sized onion chopped
shredded cabbage (fistful)
1-2 tsp szechuan sauce
1/2 tsp soy sauce
2 eggs scrambled
100 g shredded chicken
1/2 tsp pepper
Salt to taste
Oil as required
Soak basmati rice in water for 10 mins.Drain the water and keep aside.Boil water with salt in a big vessel.Add the basmati rice and simmer the flame.When the rice is cooked ,strain the rice in a colander and rinse under water to stop from getting cooked further.Drain the water and keep aside.
Heat oil in a wok,add onions capsicum,carrots,cabbage and saute for 2 mins in high flame.
Add the basmati rice,szechuan sauce,shredded chicken,scrambled egg,soy sauce,pepper,salt and reduce to medium flame.
Mix them well with the veggies and the sauces.
Serve the Szechuan chicken fried rice hot with Chicken manchurian
