Vegetable Briyani

Briyani is a one pot meal with the richness of the spices and basmati rice that gives a distinct aroma and flavour to the briyani.The goodness of the veggies makes Briyani a complete meal.The vegetable briyani is prepared with basmati rice,spices,veggies like cauliflower,carrots,peas etc.There are so many styles and variations in making Briyani.A vegetable briyani is served with some veg salads and onion raitha.


Serves 2

1 cup basmati rice
1 onion chopped
1 tomato chopped
1 carrot chopped
1 tbsp mint leaves chopped
1 tbsp coriander leaves chopped
1 tbsp peas
2 bread slices
2 green chillies
5 cashews(optional)
1/4 tsp turmeric powder
1/2 tsp chilli powder
2 tsp ginger garlic paste
2 tbsp oil
1 tbsp ghee
1 1/2 cup water
Lemon juice(from half a lemon)
Salt to taste


2 bay leaf
1 star anise
3 cloves
1 big cinnamon stick
2 black or green cardamom
1/2 tsp fennel seeds


Heat oil in a heavy bottomed pan or a nonstick pan,add the items under to temper and fry them for a min on low flame.
Add the cashews and fry for a min.Now add the green chillies and ginger garlic paste.
Now add the onions and saute till they turn transparent.


Meanwhile soak the basmati rice in warm water and keep it aside.Add the carrots,peas and saute for 2 mins on medium flame.Then add the tomatoes and saute until they become soft and mushy.


Add the mint leaves,coriander leaves and saute for 30 secs.


Add one and half cups of water,turmeric powder,chilli powder,salt and bring to boil.

Meanwhile in the other side,cut the bread slices into four pieces.Roast them in a dosa tawa on both sides with ghee on low flame and keep it aside.This step is totally optional,you can also omit this step.


When it boils add the basmati rice and bring it to boil again on high flame.


When the rice is seen on the surface reduce the flame to very low and close it with a lid.


After 8-10 mins the rice will be completely cooked,switch off the flame and add the lemon juice.

Add the roasted bread slices to the briyani and close it with a lid.Let it set for 10 mins.

Open the lid after 1o mins,Vegetable briyani is ready to serve.


Serve this Delicious Vegetable briyani with green chutney and onion raitha.

Make ginger garlic paste with 7 cloves of garlic(i used china garlic) and 3 inch long piece of ginger.

Soak the basmati rice in warm water for 10-15 mins when you start sauteing the vegetables.

Adding roasted bread slices is totally optional.

You can use green cardamom instead of black cardamom.

I have used multigrain bread here,you can also use white bread.
