Egg Tomato Gravy

Egg Tomato Gravy is one of the best combo to have with Chapathi or Steamed rice.There are so many dishes that could be made out of eggs.Eggs can be used in gravies,breads,salads and many more.They are highly nutritious and of course delicious to taste.This gravy can be prepared in no time,I usually make this when I feel lazy and bored to cook.So do try this easiest egg recipe at home and enjoy your day.

PREPARATION TIME 10 MINS

COOKING TIME 15 MINS

SERVES 4

INGREDIENTS

4 boiled eggs

2 tomatoes

2 onions

2 green chillies

1/2 tsp turmeric powder

1-2 tsp chilly powder

2 tbsp oil

Salt as required

TO TEMPER

1 small cinnamon stick

2 tsp ginger garlic paste

1/2 tsp fennel seeds

1 bay leaf

2 cloves

METHOD

Boil the eggs,break them to remove the shell.Slit the eggs with the knife and keep it aside.

Heat oil in a pan,add the onions,tomatoes,green chillies and saute for 5 mins on medium flame stirring occasionally.
Remove them from flame and cool the sauteed veggies.Then grind the veggies coarsely in a blender and keep it aside.
In the same pan add 2 tsp of oil ,add the items under’to temper’column and saute for a minute.

Now add the ground mixture to this masala items,add turmeric powder,chilly powder,salt,water and bring to boil.When it starts to boil reduce to low flame .

Cook until the gravy thickens and oil separates.

Now add the slit eggs to the cooked gravy,let it cook for 2 more minutes on low flame.Mix them gently with the gravy and switch off the flame.

Egg Tomato Gravy is ready to serve now.Serve them hot with Chapathi or Steamed rice.

TAKE CARE TIPS

Do not over boil the eggs because it makes the eggs rubbery.

Do not grind the sauteed veggies finely,grind them coarsely.

Add rock salt while boiling the eggs to prevent them from cracking.
