The health benefits of Broccoli are very extensive.It is packed with dozens of nutrients,also has therapeutic properties.Broocoli is very easy to incorporate into any dishes like soups,salads,curries and many more.
I have made parathas with broccoli using some left over wheat dough.You can also use multigrain atta or maida to make these parathas.This healthy,delicious paratha will make you crave more.
Enjoy the health benefits of Broccoli by preparing Broccoli Paratha and Broccoli Sambar.
FOR THE DOUGH
1 cup wheat flour
2 tsp ghee
Salt as required
Water as required
FOR THE STUFFING
1 & 1/2 cup broccoli (ground)
1 green chilly (chopped)
1 tsp chilli powder
A fistful of coriander leaves (chopped)
Oil or Ghee for frying
Juice of 1/4 lemon
Salt to taste
PREPARATION TIME:15 MINS
COOKING TIME:20 MINS
PREPARATION OF DOUGH
Heat 2 tsp of ghee.Take a cup of flour in a bowl,add ghee,salt and required water.Mix them to form a smooth dough.Let it rest for 10 mins.
PREPARATION OF BROCCOLI PARATHA
Wash the broccoli in water.Drain the water completely and pulse the broccoli for 3 secs in your blender.
Heat 2 tsp of ghee in a pan,add the ground broccoli,coriander leaves,lemon juice,green chilly,chilli powder and salt.Cook for 10-15 mins on medium flame until the strong smell of the broccoli goes off.
Roll out the prepared dough to a small circle.Add the stuffing at the center and spread the stuffing gently.
Fold the dough from three sides to form a triangle as shown in the pic below.
You can also gather the dough from all sides to form a ball then roll it out to form round parathas.
Heat a dosa tawa,place the rolled out paratha on the tawa.Drizzle a tsp of ghee and cook on both sides.
Healthy,Delicious Broccoli parathas are ready to serve.Serve with raithas or pickles.
