Broccoli,a healthy,tasty vegetable packed with hundreds of super nutrients.It is very low in calories but high in vitamins,minerals and fiber.I have made a vegetable curry using broccoli and one more healthy vegetable drumstick(Moringa).Moringa tree has been referred as the Miracle tree for its versatility .All parts of the Moringa are used in some form or the other to make various dishes.I have used these two healthy vegetable to make a very healthy,simple poriyal that goes well with Sambar,Dhall and Steamed rice.
8-10 broccoli florets
1 onion (chopped)
1 tomato (chopped)
3/4 cup coconut milk
2 tsp chilli powder
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tbsp oil
Salt to taste
PREPARATION TIME:10 MINS
COOKING TIME:15 MINS
Heat oil in a pan,add the items under ‘to temper’ column.When they splutter add the onions and saute until they turn transparent,then add the tomatoes and saute for 3 mins on medium flame.
Add the broccoli,drumstick and saute for 3 mins on medium flame.
Now add the coconut milk and bring to boil.
Now add turmeric powder,chilli powder,cumin powder,coriander powder and give a quick stir.
Close it with a lid and cook for 5 mins on low flame.
Finally add salt and cook for 5-7 more mins on low flame or until the veggies are cooked well.The oil starts to separate and the poriyal is ready now.
Serve the Broccoli Drumstick poriyal with steamed rice ,sambar or dhall.
