Coconut burfi or Thengai burfi is an easy sweet recipe prepared using just 3 white ingredients grated coconut,milk and sugar.To make sweets one has to be really sweet because the preparation and the procedure needs lot of patience and time.I love making sweets at home for they are my favourites.Coconut burfi is a must sweet in my place for Diwali..
Coconut burfis are easily available common sweet at the shop but homemade ones tastes so good with juicy texture. The most important thing to follow is to grate them without scraping the brown part of the coconut.Only then we can make pure white burfis.Also grating them slowly gives small florets which gives perfect shaped burfis.This recipe does not require any one string formation with the sugar syrup.
PREPARATION TIME : 10 MIN
COOKING TIME : 25-30 MINS
YIELDS : 22-25 SMALL BURFIS
INGREDIENTS
1 & 1/4 cup grated coconut
1 & 1/4 cup sugar
1/3 cup milk or water
METHOD
Add the grated coconut,sugar,milk in a non stick pan and bring it to boil.
When it boils reduce to low flame,the flame has to be on low till the end.The mixture will start to bubble and slowly thickens.Stir continuously so that they dont get burnt.
After 15-20 mins the burfis will start to thicken fast.They start leaving the pan and gathers to one side of the pan.You can feel that jelly like consistency in your hand while stirring and also the edges turn pure white.At this stage turn off the flame.The whole process takes 25-30 mins approximately.
Grease a plate with ghee,transfer the burfi mixture to the tray.Spread them gentle and tap them evenly with a greased spoon to bring smooth surface. Cut the burfis slowly with a greased knife immediately.
Pure white coconut burfis are ready.
TAKE CARE TIPS
Make burfis on low flame,increasing the flame gives brown,hard and unshaped burfis.
Add white ghee instead of yellow coloured ghee because they will change the colour of the burfis.But I have not added any ghee to this sweet recipe because the coconut on heating leaves oil.
You can add a pinch of cardamom powder and broken cashews to these burfis.
Adding pure refined sugar helps making white coconut burfis.
