Panner paratha ,a popular punjabi breakfast recipe are nothing but stuffed chappathi with grated paneer.There are so any variations that we could bring in this simple paratha to make them more nutritious and delicious as well. The grated paneer are mixed with few spices,onions,chillies and coriander leaves to enhance the taste of the stuffing which is then stuffed inside the chappathi to make Paneer parathas.
Panneer paratha recipe which I have posted here today is delicious and nutritious with the addition of Paneer (cottage cheese) which is a good source of protein.

COOKING TIME : 30 -35 MINS

INGREDIENTS

FOR THE DOUGH

1 & 1/4 wheat flour

2 tsp oil Salt to taste

Water as required

Wheat flour for dusting

FOR THE STUFFING

200 g Paneer

1/2 onion (chopped)

1/2 green chilli (chopped)

/2 tsp garam masala powder

1/2 tsp chat masala powder

1 tbsp coriander leaves (chopped)

Salt to taste

METHOD

THE DOUGH

Mix wheat flour,salt,oil in a large mixing bowl.Add water little by little to form a soft,smooth dough and let it rest for 20 mins.After that make 8 medium sized balls.

THE STUFFING

Mix well all the ingredients under ‘for the stuffing’ column without water.No cooking required for the stuffing.

THE PARATHAS

Take a small amount of the dough,dust them with flour and roll out the dough to small circle.

Add the stuffing in the centre,spread them gently and evenly leaving an inch gap at the edges.

Fold the round rolled out dough from three sides to form a triangle(refer pic below).Seal the edges by pressing them gently so that they don’t open up while cooking.

Heat a tawa and place the rolled out paratha.

Drizzle oil and cook well on both sides.You can see the edges sealed well and didnt open on heating.

Soft,Healthy Paneer parathas are ready to serve.Serve them hot with onion salad and green chutney.

TAKE CARE TIPS

Make the chapathi dough little soft because stiff dough will be difficult to fold.

Use fresh paneer for the stuffing to get soft parathas.
