Mutton Biryani

Wishing all my dear friends a very Happy Ramzan.On this special day I wanted to make something that would match everyone’s festive mood.So made a simple Mutton Biryani using electric rice cooker.
Biryanis are mughal’s main course dish made using mutton,fish,prawns and chicken.Biryanis are so aromatic and flavorful which is mainly from the basmati rice and the spices.So make sure you use the best quality rice and spice.
Making Biryani in a rice cooker is much more easier than using a pressure cooker.Do make this aromatic Mutton Biryani and celebrate your festive season with family and friends.

PREPARATION TIME : 30 MINS

MAKING TIME : 40 MINS

SERVES : 4-5

INGREDIENTS

1 cup basmati rice

400-500 g mutton

2 onions thinly sliced

2 tomatoes thinly sliced

1 tsp + 1/2 tsp chili powder

1/2 tsp turmeric powder

4 tbsp oil

Juice from one lemon

Salt to taste

A generous pinch of orange food color (optional)

TO GRIND

16 cloves garlic

4 inch ginger

1 fistful mint leaves

1 fistful coriander leaves

2 green chillies

TO TEMPER

3 star anise

2 cinnamon stick

4 cloves

3 cardamom

3 bay leaf

1 & 1/2 tsp fennel seeds

METHOD

PREPARATION

Pressure cook the mutton with 1/2 tsp chilli powder,1/2 tsp turmeric powder,salt and 2 & 1/2 cups water for 10-15 mins or until cooked.

Soak the basmati rice in water for 15 mins.After 15 mins drain the water and keep it aside.

Grind the items under ‘to grind column’ with 1-2 tbsp water and keep it aside.

Mix the orange food color with lemon juice and keep it aside.

Heat oil in a large kadai add the items under ‘to temper’ column .After 2 mins add the onions and saute for 5 mins on medium flame.Then add the tomatoes and saute until they turn soft and completely cooked.

Now add the ground mixture and saute for 5 mins until the raw smell disappears.

Then add the cooked mutton pieces and cook for 5 mins with the gravy on low flame.

Measure the broth and curd carefully.

Finally add 2 & 1/2 cup mutton broth and 1/2 cup curd to the sauteed gravy.Add 1 tsp chilli powder,salt and bring it to boil.
When it boils transfer them to the electric cooker and switch on to cooking mode.Again let it boil and then add the rice and make sure the switch is on cooking mode.Close the lid and let it cook.

When it is cooked it automatically comes down to keep warm mode.Now open the lid and add the lemon juice mixed with orange color and let it set for 30 mins.

TAKE CARE TIPS

Do not soak rice for more than 20 mins.

For 1 cup rice add 1 & 1/2 cup water.Do not exceed the quantity of water to be added.

Adding mutton broth enhances the taste and flavor of briyani.

You can also add plain water instead of curd.
