Vellam pidi kozhukatai is prepared using jaggery which is made into a syrupy consistency (vellam pagu) and then mixed with rice flour,grated coconut ,cardamom powder to make Vellam pidi kozhukatais.
A sugar free kozhukatai where jaggery is used instead of sugar for sweetness.The health benefits of jaggery is extensive,it contains high quantity of required vitamins,minerals,iron etc.It is very important to include natural sugars for white sugar adds lot of empty calories to our body.

INGREDIENTS
1 cup HOMEMADE IDIYAPPAM FLOUR
1 cup jaggery
1 cup water
1/4 cup grated coconut
1/4 tsp cardamom powder
METHOD
Grate the coconut and chop the jaggery to small pieces.
In a pan add jaggery with 1 cup of water and bring it to boil .When it boils simmer to low flame and cook for 5 mins.Strain them through a metal strainer.
In a large mixing bowl add rice flour,grated coconut,cardamom powder and mix well.Now add the filtered jaggery syrup little by little(you may not need the entire jaggery syrup sometimes)
Mix well to form a soft,smooth dough.Make equal sized balls out of the dough.Press each portion separately between your palm to make Pidi kozhukatais.
Steam for 12-15 mins or until cooked well inside.
Healthy Vellam pidi kozhukatais are ready now.
TAKE CARE TIPS
Use homemade flour for better result.
Store bought flour has corn flour in it which makes the kozhukatai rubbery.
The jaggery syrup must be hot while adding to the flour which helps to get soft kozhukatais.
