Ridge gourd / Peerkangai is a fiber rich vegetable with white spongy pulp part and ruff outer skin part.But these peels are edible and can be used to make delicious chutney.
Ridge gourd is low in saturated fat and calories thus aids weight loss.So whenever you make Peerkangai poriyal at home ,never throw the peels instead make chutney and serve with breakfast.
PREPARATION TIME : 5 MINS
COOKING TIME : 20-25 MINS
SERVES : 4
INGREDIENTS
2 cups ridge gourd peels
4 dried red chilly
6 cloves garlic
A pea sized tamarind
1/2 tsp mustard seeds
1/2 tsp urad dhal
1 tbsp oil
METHOD
Peel the skin part using a peeler and wash it well in water.
Heat 2 tsp oil in a pan and saute the ridge gourd peels for 20-25 mins until they become soft and cooked.
Heat oil in another pan add tamarind,red chillies,garic and saute for 2 mins in medium flame.
Now grind everything together with little salt.
Heat oil in a small pan ,add mustard seeds and urad dhal.When it splutters add it to the chutney.
Serve the healthy Peerkangai peel chutney with your favorite breakfast.
I have tried chow chow peel chutney. With peerkangai I do chutney but I should try ur version looks flavorful

My mom actually makes ridge gourd chutney using the vegetable but not the peel..will surely try this out☺☺…great recipe☺
