Idly podi or Idly milagai podi is a dry roasted spicy podi(powder) and one of the best accompaniment for Idly and Dosai.These podi when mixed with ghee or sesame oil tastes so divine with crunchy ,nutty lentils. I usually make these podi in large quantities and store in an airtight container ,there is no need to refrigerate these podi varieties.
There are many variations followed in making these Podi , I have tried them with garlic,coconut but finally this recipe was the best of all.So wanted to share it today in my space.

PREPARATION TIME : 30 – 45 MINS

INGREDIENTS

2 cups urad dhal

1/2 cup bengal gram

20-22 dried red chilies

4 tsp sesame seeds

1/4 tsp hing (asafoetida)

A fistful of curry leaves

Salt to taste

METHOD

Heat a pan and dry roast the urad dhal and bengal gram separately in low flame until they change to golden brown in color.This will take 15-20 mins for each one.Better have two kadais to save time.

Then dry roast the dried red chilies for 5 mins in low flame.Now dry roast the sesame seeds for 3 min in low flame.

Finally dry roast the curry leaves just for 2- 3 mins in low flame.

Cool the dry roasted ingredients.Transfer it to your mixie jar ,add asafoetida and salt.

Grind them coarsely,cool them and then store in an airtight container.

TAKE CARE TIPS

You need not add oil while roasting.

Do not get tempted to increase the flame.

Use two kadais or pan to save time and your energy.

After grinding cool the mixture and then store in an airtight container.
