Aviyal is a nutritious dish prepared with lot of healthy vegetables mixed with coconut gravy and thick curd which is finally tempered with cumin seeds and curry leaves in coconut oil.Such a flavorful dish with rich aroma and taste.It is a traditional recipe of Kerala and also served for Onam Sadya.
Aviyal with Adai tastes so good with all the goodness of the veggies and the lenthils .When serving with rice they go well with dhal rice and papad.Very healthy veggies combo to make for our family.

1/2 raw mango
1 raw plantain
200 grams elephant foot yam
1 & 1/2 cup water
Salt as required
1/4 cup grated coconut
1 tsp cumin seeds
2-3 green chilies
1 tbsp coconut oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 sprigs of curry leaves
Wash and cut the veggies to long strips of pieces.
Add 1 & 1/2 cup of water in a pan, add the carrots,yam and raw plantain first.Let it boil and cook for 5 mins in medium flame with salt.Then add the raw mango and cucumber and cook for 4-5 minutes.
Now grind the items under TO GRIND column.
Add them to the cooked veggies and cook for 3-5 mins in medium flame.Finally add the curd,mix well and switch off the flame.
Now heat coconut oil in a pan.Add the mustard seeds,cumin seeds,curry leaves and when it splutters add it to the veggies and mix well.
Healthy Aviyal is ready to serve now.
TAKE CARE TIPS
Do not over cook the veggies and make them very soft or mushy.
You can add 1/2 tsp of turmeric powder for color.
You can add your favorite vegetables also.
