Nankhatai is a popular baked cookie that one could easily make at home.Homemade cookies are always more delicious than the store bought ones for we use only fresh ghee or butter to make them.But the store bought cookies have good amount of vanaspati which does not yield crumbly textured biscuits instead they tend to stick on to our palate while eating.
Also the cookies made at home are so fresh for they are just out of the oven ,thus makes it more tempting and delicious.Even those who are beginners in baking can give this a try for this Diwali.Such an easy recipe to make at home for homemade biscuits.

PREPARATION TIME : 10 MINS

BAKING TIME : 14-16 MINS (180 DEGREE C)

YIELDS: 45*

INGREDIENTS

1 cup maida (all purpose flour)

3/4 cup besan flour (chickpea flour)

1/4 cup rava (sooji)

1 cup sugar

3/4 cup ghee

1/2 tsp baking powder

1 tsp cardamon powder(optional)

22-25 almonds (cut into half) (optional)

METHOD

Take maida,besan flour,rava ,cardamom powder in a large mixing bowl,then add baking powder and mix well.

Powder the sugar and mix it with ghee.

Add the sugar and ghee mixture to the dry flour ingrediets.

Mix everything together to form a soft,smooth dough.

Make small balls out of the dough and gently flatten them .Place badam or cashew over each cookies.

Preheat the oven to 180 degree C and bake for 14-16 mins.After that cool them completely on wire rack.

TAKE CARE TIPS

If the dough is hard with cracks add little more ghee to make it soft.

The dough has to be soft and smooth to yield nice round cookies.So adjust the ghee accordingly.

Garnishing the cookies with nuts is totally optional,you can also bake them plain without nuts.
