Sweet Somas is a deep fried sweet with crispy outer part and sugary sweet mixture inside.The sweet filling is usually made with bengal gram powder,rava and sugar,but I have added some roasted nuts to make it more rich and special for Diwali.
Some even add Khoya ( mawa ) as a filling but the shelf life will be less compared to the dry filling mixture.This is one such sweet which could be made 2 days prior to Diwali and it remains crispy,crunchy when stored in an airtight container.Do try this crispy sweet for this year Diwali and have a wonderful celebration with your family and friends.
PREPARATION TIME : 25 MINS
COOKING TIME : 1 HOUR
YIELDS : 22-23
INGREDIENTS
FOR THE DOUGH
2 cups maida
2 tbsp ghee
1/2 tsp salt
FOR THE FILLING
1/2 cup rava
1/2 cup grated coconut
3/4 cup sugar
1 tbsp roasted bengalgram
3 cardamoms
5 cashews(chopped)
5 almonds(chopped)
5 pistachios(chopped)
5 raisins
1/2 tsp ghee ( for roasting nuts )
METHOD
Take the maida,salt in a large mixing bowl.Heat the ghee and add it to the maida,then add water little by little to form a soft dough without any lumps or cracks.
Dry roast the rava and grated coconut separately in a pan.
Powder the sugar,cardamom and roasted gram in your mixie.
Roast the nuts in ghee and add it to the sweet filling mixture.
Make small balls out of the dough.Take a ball and roll it out to a small circle,and fill it with 1-2 tsp of the sweet filling mixture.You can use any mould to make perfect round shapes.
Close it as shown in the pic below.Press the edges to seal them perfectly and then trim them evenly with any tool you have .
Heat oil in a pan and deep fry them in medium flame until they change golden brown in color.
Remove the excess oil using a kitchen paper.
Crispy ,crunchy Sweet Somas are ready now.
Do not get tempted to fry them in high flame.
Adding nuts is totally optional.
Frying them in medium flame yields nice crispy somas.
