Badusha is a deep fried sweet recipe made from all purpose flour,then dipped in sugar syrup and finally garnished with nuts and saffron strands.I have seen them being garnished with colored grated coconuts in the sweet shops near my place.They look so colourful and tempting though they are tasteless.So being fascinated by its appearance I always wanted to garnish them with coloured coconut and make a colorful sweet for Diwali.
Badusha dough needs to be soft without cracks and the dough should not be kneaded for a long time.The more you knead the more hard they would turn ,which will not absorb the sugar syrup thus resulting in hard badushas.Try this easy sweet for this Diwali and share it with your family and friends

COOKING TIME : 20 MINS
YIELDS : 15-17
INGREDIENTS
FOR THE DOUGH
2 cups maida
1/2 cup melted butter
2 tbsp curd
1/2 tsp baking powder
1/4 tsp baking soda
Water as required
FOR THE SUGAR SYRUP
1 & 1/2 cups sugar
2 cups water
3-4 cardamoms
METHOD
Grate only the white part of the coconut and then mix the food colour you have with little water.(For garnishing and totally optional)
Now add a tsp of grated coconut to each colour and let it dry for 4-5 hours.(optional)
Prepare the sugar syrup and keep it aside.
Sieve the maida with baking powder and baking soda.Now add the curd and melted butter.
Make a soft dough by adding water little by little.Do not knead the dough for a long time.
Let it rest for 10-15 mins.Now make small balls out of the dough and flatten them gently making a hole at the centre.
Haet oil in a pan and deep fry them in low flame .
Transfer the fried badushas to the sugar syrup .Let it soak for 30 mins .
Soft ,flaky badushas are ready now.
TAKE CARE TIPS
Do not knead the dough for a long time for it makes the badushas hard.
Do not add more of baking powder or soda.
Add a tsp of lemon juice to the sugar syrup to avoid crystallization .
Garnishing is totally optional and depends on your wish.
If you don’t want to garnish with coloured coconuts just skip the first 2 steps.
You can garnish them with pistachios or saffron strands.
