Halwas are a must classic sweet for most of the Indian weddings,festivals and special occasions.This makes them so special and when garnished with nuts they become so rich.Halwas made with fruits and vegetables gives such a nice texture ,colour,taste and flavour to the halwa than the ones made with flour.
Pumpkin Halwa or Kasi Kalwa can be made with either white or yellow pumpkin.You can either grind the pumpkin pulp or grate them using a hand held grater or food processor.But grating them brings gooey texture to the halwa and you would love to have this glossy, jelly halwa the very moment you finish making them.Do try this Halwa at home and have a wonderful day with your family and friends.

PREPARATION TIME : 10 MINS
COOKING TIME : 45 -55 MINS
SERVES : 4-5
INGREDIENTS
2 cups grated pumpkin
1 & 1/4 cups sugar
1/4 cup water
2 tbsp ghee
8-10 cashews (broken)
3 cardamoms
Few saffron strands
A generous pinch of food colour
METHOD
Remove the skin,seeds of pumpkin and grate them using a grater.Add them to the cooking pan with 3 cardamoms.
Add 1/4 cup of water and cook on low flame until the pumpkin is well cooked.This will take 30 mins approximately.
Now add the food colour,saffron strands,sugar and cook on low flame until the sugar thicken with the pumpkin.This will take 15-20 mins
Keep cooking on low flame and stir occasionally .
When it starts to thicken add the cashews roasted in ghee to the halwa.
Mix the cashews well and the halwa is ready now.
Glossy Pumpkin Halwa is ready to serve now.You can serve them warm or chilled.
TAKE CARE TIPS
Make sure the pumpkin is completely cooked before adding the sugar.
Never get tempted to increase the flame,cooking on high flame will not give the right halwa texture.
Do not squeeze the water out of the pumpkin.Cook them with the water content.
