Pottukadalai Urundai is prepared using roasted gram and jaggery.Mittai means Sweet ,this sweet has a unique taste with the addition of jaggery.A very healthy sweet recipe,rich in proteins and also jaggery is substituted for sugar.An easy to make sweet at home with just two main ingredients ,only the jaggery consistency matters.
It is very important to shape them when it is hot.So you can dust your hands with rice flour instead of greasing them with ghee.Ghee gives a glossy look but rice flour reduces the heat and makes shaping easy.
Make sure to buy good quality jaggery to get perfect kadalai mittai.A healthy protein rich snack for kids in the evening.

COOKING TIME : 20-25 MINS

INGREDIENTS
1 cup pottukadalai (roasted gram)
3/4 cup jaggery
1/3 cup water
3 cardamom or 1/2 tsp cardamom powder
Ghee for greasing your hands
(OR)
Rice flour for dusting your hands
METHOD
Break the jaggery to fine pieces and then measure.Transfer it to a pan add 3/4 cup of water and bring it to boil.When it is completely dissolved filter it and discard the residue.
Again bring this jaggery syrup to boil on medium flame.Add 3 cardamoms or cardamom powder and mix well.
Watch for the right consistency,by dropping them in water.It should not get dissolved in the water and also form a soft balls when gathered.
Now you can see them boiling with nice golden bubbles.Remove the cardamom and switch off the flame immediately.
Add the roasted gram and mix well.
Grease your hands with ghee or dust with rice flour and start making small balls.(I have used ghee to get that glossy look for the pics)
A healthy,protein rich snack is ready now.
TAKE CARE TIPS
Use good quality jaggery ,do not use paggu vellam.
You can use a pinch of sukku powder for the flavour.
If it becomes hard while shaping ,you can keep them in flame for few seconds and start shaping.
