Tutti Frutti Kesari is one of my favorite Kesari that I love to prepare when I have guests.These Tutti frutti are raw papaya pieces cooked in sugar syrup then mixed with desired food colors.They add so much richness to the food and are widely used in making cakes,cookies and breads.
The addition of Tutti Frutti can make even a simple recipe like kesari so attractive,colorful and tempting.Thus making it perfect for any special oaccsion or celebration.
PREPARATION TIME : 5 MINS
COOKING TIME : 10 MINS
SERVES : 5-6
DO REFER MY OTHER KESARI VARIETIES TOO
INGREDIENTS
1 cup rava / sooji
1 cup sugar
3 cups water
1/2 cup tutti frutti
2 tbsp melon seeds
8 cashews
3 tbsp ghee
1/2 tsp cardamom powder
A generous pinch of food color
METHOD
Roast the rava for 5 mins in low flame.Bring a pan with 3 cups of water to boil.Roast the cashews in 3 tbsp of ghee and keep it aside.
Add 1/2 tsp of cardamom powder and generous pinch of food colour.When it boils add 1 cup sugar.
Add the tutti frutti ,melon seeds and simmer the flame to low.
Now add the rava stirring continuously to prevent any formation of lumps.Stir well and add the roasted cashews.
Switch of the flame when the rava is cooked.
The consistency should be like dosa batter for they will turn dense on cooling.The first pic shows the consistency when I switched off the flame and the 2 nd pic is just 10 min after that.You can make out the difference in the consistency.
Serve the Tutti Frutti kesari hot and have a wonderful day.
TAKE CARE TIPS
Stir continuously while adding the rava else you could end up with rava lumps.
You can also use 3 cardamoms instead of cardamom powder.
