Thoothukudi macaroons are very famous cookies in Thoothukudi ,though we could get them everywhere in Tamilnadu.Mcaroons are light ,nutty ,crunchy cookies that requires just 3 ingredients.No oil and No butter cookie that has a crunchy crust with gooey cashew crumbs with nutty flavor.
You will just love the process of making these macaroons at home.All you need is an electric mixer,you can never beat them with your hand.Do try this simplest cookie at home and share it with your loved ones.
PREPARATION TIME : 15 MINS
BAKING TIME : 110 DEGREE C (1 -1 & 1/2 HOURS)
YIELDS : 25*
INGREDIENTS
2 egg whites
1/2 cup sugar (measure and powder)
1/3 cup cashew (coarsely ground)
METHOD
Preheat your oven to 110 degree C.Separate the egg whites from the eggs and bring it to room temperature.Beat the eggs with your electric beater for a minute in low speed and then 2 mins in medium speed.
Beat until you get soft peaks.
After you get soft peaks,add sugar little by little ( 1 tsp at a time ).Beat in medium speed for 3 minutes and then 4-5 minutes in high speed until you get stiff peaks.
You will now get firm ,fluffy peaks.
Now add the ground cashews and mix gently without giving much pressure.
Transfer them to a piping bag.My nozzle was too small so I used aavin milk cover you can also use a zip lock bag to pipe them.
Grease your baking tray or use a parchment paper and make small cone shaped structures.Bake them for 1 hour -1 & 1/2 hours at 110 degree C.
Macaroons are now ready.Let it come to room temperature and store in an airtight container.
TAKE CARE TIPS
The eggs should be at room temperature.
Add sugar little by little while beating.
Do not powder the cashews just grind them coarsely.
You can add 1/2 a tsp of vanilla extract also.
