Potato Brinjal gravy is a one pot recipe that could be prepared in just 15 minutes.Potatoes and brinjals when cooked together makes a delicious gravy and it goes well especially with rotis and pooris.The addition of green chilies and coriander leaves adds such a nice flavor to the gravy.
As potatoes get paired with any veggies they easily get blended with brinjals too ,to make delicious curries and gravies.Both the veggies are cooked to a mushy form and finally garnished with finely chopped fresh coriander leaves that makes the gravy more flavorful.

INGREDIENTS

4 brinjals / eggplant

2 potatoes

1 onion

2-3 green chilies

1/2 tsp turmeric powder

1/2 tsp cumin powder

1/2 tsp mustard seeds

1/2 tp urad dhal

1 cup water

2 tsp oil

A handful of finely chopped coriander leaves

Salt to taste

METHOD

Wash the brinjals,cube them and immerse them in water.Cube the potatoes also.

Heat oil in a pan ,add the urad dhal and mustard seeds let it splutter.Now add the green chilies,onion and saute for a minute.Finally add the potatoes,brinjals and saute for 2 minutes in medium flame.

Add turmeric powder,cumin powder,salt ,water and bring it to boil.

Transfer it to a cooker and pressure cook for 3-4 whistles until they become soft and mushy.Finely chop a handful of coriander leaves and keep it aside.

Open the lid ,switch on the flame to medium ,add the coriander leaves and mix well.

Serve with rotis or pooris.
