I’m super excited today for its my 200 th post.When it comes to celebration I always prefer making Indian sweets for cakes and cookies,also I m not that expert in making them.I had so many recipes in my list for my 200th post but finally chose Jangri especially for its colour and richness.They are so attractive and inviting, the moment we see them thus perfect for all occasions and celebrations.
The main ingredient in making Jangri is Urad dhal.Urad dhal is soaked in water for an hour,ground to a buttery batter ,deep fried in ghee/oil and finally dipped in sugar syrup before serving.You can also garnish them with almonds,pistachios or saffron strands before serving.Do make this bright coloured sweet at home and have a great day with your family and friends.

PREPARATION TIME : 15 MINS

SOAKING TIME : 1 HOUR

COOKING TIME : 40 MINS

YIELDS : 35-40 MINI JANGRIS

INGREDIENTS

FOR THE BATTER

1 cup urad dal

2 tsp rice flour

A generous pinch of orange food colour

Oil for deep frying

FOR SUGAR SYRUP

1 cup sugar

1 cup water

A pinch of orange food colour

3 cardamoms (or) rose essence

METHOD

Soak the Urad dal in water,drain the water and grind them to a buttery consistency by adding very little water.

Mix the batter,food colour and rice flour well.

You can use a zip lock bag,piping bag or just plain milk cover or oil cover for piping the jangris.But make very small hole because they become big after sometime.

Meanwhile bring the sugar,water to boil.Add the cardamoms,orange red colour and boil until they become thick and form one string consistency.This might take 6-8 mins.Heat oil in a pan ,bring it to low flame and pipe out small jangris.Now increase the flame to medium to get crispy jangris.

Cook the jangris on both sides.Then dip them in sugar syrup for 3 minutes.Remove and arrange them in a plate.

Rich,colourful Jangris are ready now.

TAKE CARE TIPS

Always grind the batter using your grinder,mixie does not yield perfect batter.

Add very little water for grinding the batter.

Add cardamom or rose essence for the sugar syrup.

Adding food colour to the sugar syrup is totally optional.

  1. Many many congratulations, Swapna……..You remind me the recipe of ‘Rash Bora’ which we also prepare with urad dal……..only the difference is that we don’t add any colour…….But I really like the vibrant orange colour of your ‘Jangri’ 🙂
