Capsicum kulambu is prepared by cooking capsicum in tamarind extract with green chilies,garlic and shallots.It tastes so good when had with just plain curd rice, you can also have them with Pazhaya soru (Steamed rice soaked in water and curd overnight).
One of my favorite kulambu especially during summer for it makes my work easy,simple and can be served for lunch with just curd rice.
PREPARATION TIME : 5 MINS
COOKING TIME : 10 MINS
SERVES : 4
INGREDIENTS
2 capsicum
12 shallots
2 green chilly
6 cloves garlic
A gooseberry sized tamarind (soak in 3/4 cup of water)
1/2 tsp turmeric powder
1 tsp chili powder
2 tbsp sesame oil or any oil
1/4 tsp mustard seeds
1/2 tsp urad dhal
Salt to taste
METHOD
Heat oil in a pan or cooker add mustard seeds,urad dhal and when it splutters add the garlic ,green chilies and shallots.Saute for 3 mins in medium flame.Now add the capsicum and saute for 2 mins in medium flame.
Strain the tamarind extract and add them to the sauteed capsicum.Add turmeric powder,chilly powder,salt and let it boil.
Transfer it to a cooker and pressure cook for 3 whistles in high flame.
Serve with curd rice for lunch .
