Pickles are a must accompaniment for curd rice especially during summer season.I have posted a simple lemon pickle recipe with green chilies , sun dried for few days then tempered with mustard seeds and hing.An easy pickle recipe every newbie cooks should try at home.
This recipe doesn’t require much oil ,just 2 tbsp of sesame oil would be enough to make them.During summer, I make curd rice often but I don’t serve them with pickles all the time.Instead I make lot of kootu varieties with summer veggies to keep the lunch light and healthy.So you can make these pickles and use them may be once or twice a week and indulge more on fruits and vegetables to keep your family healthy with good nutrition.
PREPARATION TIME : 10 MINS
SUN DRYING TIME : 5 DAYS
INGREDINETS
5 lemons
8-10 green chilies
1/4 tsp mustard seeds
2 cups water
2 tbsp sesame oil
1/4 tsp turmeric powder
A generous pinch of hing
Salt as required
METHOD
Bring 2 cups of water to boil,add the whole lemons and let it boil for 3 mins.Switch off the flame and let it cool.Do not discard the water,you ll be adding it to the pickle for sun drying.
Cut the lemon into small pieces and slit the chilies too.
Take a large bowl ,add the lemon pieces, the chilies and salt with the boiled water.Mix them well with a clean spoon.
Sun dry them for 5-6 days.
Heat oil in a pan,add the mustard seed,hing and when it splutters add the sun dried items.Add 1/4 tsp turmeric powder,give it a boil and switch off the flame immediately.
Store them in an airtight container when it cools down.
I love preserved lemons and this looks amazing. 🙂
