Variety of non veg dishes are prepared from chicken especially broiler chicken.But today the demands for country chicken(nattu kozhi) has risen compared to broiler chicken.Country chicken refers to the native chicken breeds of IndiaThe broiler chicken are fed with very high amount of antibiotics,growth hormones and additives.These chemicals even after cooking remains in the chicken.Whereas the country chicken are fed with corn,maize,soya etc so doesn’t cause any health hazards.
Before cooking, the country chicken needs to be cleaned well with turmeric powder and water.And it takes at least 30-40 mins to get cooked.You can add a piece of ginger and butter to fasten the cooking process.
These country chicken are best for kulambu and gravies than for fries and roasts.I have shared a very simple Nattu kozhi kulambu recipe from my native place Virudhunagar(Tamil Nadu).Do try this healthy chicken kulambu and serve it with your favorite breakfast or for lunch with steamed rice.
PREPARATION TIME : 20 MINS
COOKING TIME : 30-40 MINS
SERVES : 4
1/2 kg Nattu kozhi (country chicken)
15 shallots(small onions)
1 & 1/2 cup coconut milk
1 tsp turmeric powder
2-3 tsp red chili powder
3 tbsp sesame oil
5 cloves garlic
2 inch ginger
1/2 tsp fennel seeds
1 tsp pepper
2 tsp cumin powder
Grind the items under ‘to grind ‘column with water to a fine paste and keep it aside.
Heat oil in a pan,add the shallots(chopped) and the chicken.Saute for 5 mins in low flame.Then add the ground mixture and coconut milk.
Now add turmeric powder,red chili powder and salt.
Pressure cook for 3 whistles in high flame ,then simmer the flame to low and cook for 12-15 mins.
Serve the Nattu kozhi kulambu with your favorite breakfast or for lunch.
TAKE CARE TIPS
To make coconut milk ,take 3/4 of coconut and grind it with 2 cups of water.
If the kulambu goes watery,add 2 tsp of ground cashew paste.
