SWEET DIAMOND CUTS

Sweet Diamond Cuts or Shankarpali is such an easy sweet made with just 3 main ingredients (maida,sugar and ghee).But as they are deep fried ,it takes time to fry these small diamond bites.They are also called by other names like Bombaylakadi ,Kalakala and Maida biscuits.
It can prepared both sweet and savoury,I have already posted the savoury version in my space called SPICY DIAMOND CUTS.
Every Kitchen newbies and Bachelors should give this simple sweet recipe a try for it doesn’t require any particular consistency.
It stays good for 10-15 days when stored in an airtight container.So you can make them a day prior to any special occasions or celebration at home and spend your valuable time with your lovely family during festive days.

PREPARATION TIME : 10 MINS

COOKING TIME : 25 MINS

YIELDS : 3 CUPS

INGREDIENTS

1 cup maida

1/3 cup sugar (heaped)

1 tbsp ghee

1 cardamom (optional)

Oil for frying

Water as needed (less than 1/4 cup *)

METHOD

Powder the sugar and cardamom finely.Reserve a tbsp of this mixture and keep it aside.

Mix maida and powdered sugar.

Add sugar,maida

Add warm ghee or oil and water to the dry ingredients to make dough.

Make equal sized balls out of the dough.

Roll one part of the dough and cut diamond shaped bites out of the rolled out dough.

Heat oil in a kadai,add the diamond shaped pieces and fry in low flame until they are dark orange in colour.Drain the excess oil using a kitchen paper.

Now you can make sugar coated diamond cuts by adding the hot fried diamonds directly to the sugar mixture we reserved in the first step.Just toss them well to get coated evenly.Kids will love to have these Sugar coated diamond cuts.

Serve them over coffee or tea.

TAKE CARE TIPS

You can add a pinch of baking soda before kneading the dough.

You can also add an egg to make the dough.(1 egg for 2 cups maida).Just alter the quantity of water to be added.

Make thin diamonds to yield crispy ones.

If you are in a hurry,then make big diamond cuts but not thick ones.

Fry them in low flame ,do not get tempted to increase the flame.
