Mudakarthan also known is Balloon Vein leaves in English is a herb used for treating Arthritis and joint pains.Not many like the taste of Mudakathaan for it is so bitter.Even I had a strong aversion for this herb but now have started to take them especially for its healthy benefits.You can try to include them at least once a month along with coconut ,tamarind and some dhalls .So that the strong taste of this Mudakathaan herb subsides easily.
So many healthy dishes can be prepared with Mudakathan like rasam,kootu,dosai,idly and many more but the easiest way to incorporate them is to make Chutney.I have shared here a simple chutney recipe,do make this healthy chutney for your family and serve with idly or dosai.
PREPARATION TIME : 5 MINS
MAKING TIME : 10 MINS
SERVES : 4
1/4 cup mudakathaan (balloon vein herb)
1/2 cup grated coconut
3 dried red chilies
2-3 cloves of garlic
1 & 1/2 tbsp sesame oil
1/4 tsp mustard seeds
1/2 tsp urad dhal
A pea sized tamarind
Salt to taste
Water as required
Heat 1/2 tbsp oil in a pan and saute the mudakathaan for 7 mins in low flame.Transfer them to a plate and let it cool.
In the same pan add 1/2 tbsp sesame oil and saute grated coconut,tamarind,dried red chilies and garlic for 2 mins in medium flame.Add the mudakathaan to this mixture and let it cool.
Add them to your mixie with salt,water and grind it to a fine paste.Add the remaining 1/2 tbsp sesame oil in a small pan,add mustard seeds and urad dhal.When it sputters add it to the chutney.
Serve the Mudakathan Chutney with Idly or Dosai.
TAKE CARE TIPS
Saute the mudakathan in sesame oil for 5-7 mins in low flame to reduce the bitterness of the herb.
You can fry a tbsp of bengal gram in oil and add it while grinding the chutney to lower the bitter taste.
