Kurma is a side dish gravy prepared using veggies or meat cooked in coconut or curd based gravy.There are so many variations used in making kurma and it differs from every region.In most of the southern parts of India,kurmas are made using coconut milk that enhances the taste and flavour.I am sharing here an easy Vegetable kurma recipe every newbie cooks and bachelors should try.We don’t have to grind or make paste of any ingredients,only thing we need to do prior is cut the veggies and extract the coconut milk.If you are using ready made coconut milk then you can make this in a jiffy. I have not used curd here instead have added tomatoes for the tangy taste and colour.If you prefer for a curd based gravy then you can add 1/4 cup curd and omit the tomatoes.Do make this healthy Vegetable kurma at home and served it with your favourite breakfast or with just steamed rice.

2 carrots (chopped)
1/4 cup fresh peas
15 cauliflower florets
2 tomatoes (chopped)
1 onion (chopped)
2 cups coconut milk
2 tsp ginger garlic paste
2 green chillies
2 bay leaf
1 star anise
1 piece cinnamon stick
1 tsp fennel seeds
1 tsp red chilli powder
1/2 tsp turmeric powder
3 tbsp oil
A handful of chopped mint leaves
A handful of chopped coriander leaves
Salt to taste
Water if required
Heat oil in a pan,add cloves,cinnamon,cardamom,fennel seeds,bay leaf and saute for a minute.Then add the green chillies , onions and saute for 2 mins in medium flame.
Now add chopped carrots,cauliflower florets and saute for 4 mins n medium flame.
Then add the ginger garlic paste,cauliflower and saute for 5 mins in medium flame.
Add the peas,turmeric powder,chilli powder,salt and saute for a min in low flame.
Finally add coconut milk and let it boil.When it boils simmer the flame to low and cook for 10 mins or until the veggies are cooked.
When the oil separates switch off the flame and add the mint leaves and coriander leaves.
Delicious creamy Vegetable kurma is ready to serve now.
TAKE CARE TIPS:
To extract coconut milk,add half of a coconut with 2 & 1/2 cups water and grind it in your mixie.Strain and discard the residue.
To make ginger garlic paste grind 6 cloves garlic with 2 inch piece of ginger
Sometimes adding peas directly to the oil might make they shells hard,that’s why I always add them later for sauteing.
