Mutton Markandam kulambu is prepared using mutton ribs or riblets.Mutton ribs are rich,meaty,juicy and packed with flavour.Mutton ribs contains thin layers of meat,fat and bones that add their unique flavor to the gravy.The reason why lamb ribs are so delicious is probably because they are high in saturated fats and cholesterol.Mutton ribs cooked in spicy and rich gravy is highly irresistible.
Such an easy recipe made with freshly ground spices and coconut milk that enhances the flavour and taste.I always prefer grinding my own masalas just before making the kulambu instead of using ready made kitchen powders.Lamb ribs need to be cooked low and slow to become juicy and tender.This delightful recipe of mutton ribs can be ready in approximately 30 mins.Here is the recipe for you to enjoy!

INGREDIENTS

350 g mutton ribs(markandam)

15 shallots

2 cups coconut milk

1/2 tsp turmeric powder

1 tsp red chilly powder

1 tsp cumin powder

1 tsp coriander powder

3 tbsp oil

Salt to taste

TO GRIND

1 inch cinnamon

1 star anise

1 tsp fennel seeds

3 cloves

1 inch ginger

8 cloves garlic

2 tsp chopped coconut

2 tsp chopped cashews

6 dried red chillies

METHOD

Clean and wash the lamb ribs in water for 3 times.Heat oil in a cooker,add the shallots and aute for 2 mins in medium flame.

Add the cleaned ribs(markandam) ,turmeric powder and saute for 3 mins in medium flame.

Grind the items under ‘to grind column ‘ with 3 tbsp water to a fine paste.First dry grind the masalas then grind the remaining items with water.Add this to the mutton and saute for 3 more mins.

Add coconut milk,chilli powder,cumin powder,coriander powder,salt and let it boil.Close the cooker lid and pressure cook in high flame for 3 whistles after that reduce the flame to low and cook for 15 mins.

Open the lid when the pressure is completely released.

Delicious Mutton markandam kulambu is ready now.Serve it for your breakfast,lunch or dinner.

TAKE CARE TIPS

To make coconut milk grind 3/4 of coconut with 2 & 1/2 cups of water .Filter them and discard the residue.
