Javarisi Payasam is specially made during religious festivals as a Neivedhyam.Javarisi is Tapioca pearls which is prepared from Cassava roots and it mainly contains starch thus high in carbohydrates.These tapioca pearls are widely used in Indian cooking for making breakfast items like vadais,upma,pongal and also in desserts and sundaes like faaludas.They are so attractive, inviting and perfect for any special occasions.
I have shared here an easy payasam recipe with Tapioca pearls.They are so easy to cook and can be prepared in few minutes even for a large group of people.To fasten the cooking process you can soak the javarisi (tapioca pearls)in water for half an hour.But I have not soaked them in this recipe.This payasam tend to become thick on cooling so add water accordingly.If you are going to have it immediately then the amount of water i have specified below would be enough but if you are going to have it later then add extra 1/4 cup of water.Make sure you cook the tapioca pearls well before adding sugar,then add milk and garnish with rich ghee roasted nuts and raisins.You can serve them warm or chilled.

INGREDIENTS

1 & 1/4 cup tapioca pearls / javarisi

2 & 1/2 cup water

3/4 cup sugar

3 cardamoms

8 cashews(broken)

5 raisins

3 tbsp milk

2 tbsp GHEE

METHOD

Bring water to boil and add the javarisi.Let it cook for 25-30 mins or until the tapico pearls are cooked well.

Add three cardamoms,sugar and cook for 3 mins in low flame.Now switch off the flame and then add milk and mix well.

Roast the nuts,raisins and cardamom (optional) in ghee and add it to the payasam.

Serve the Javarisi Payasam / Sago Kheer warm or chilled.
