I m sharing another spicy version of Diamond cuts that i made for Diwali with some garlic,red dried chillies and fennel seeds that made it so flavorful.These spicy Shankarpali is a must for festive season for we indulge ourselves on rich sugary stuffs.And this spicy snack helps to balance our taste buds after a huge intake of sweets and are a great evening snack for kids back from school.
PREPARATION TIME : 10 MINS
MAKING TIME : 20-25 MINS
YIELDS : 2-3 CUPS*
INGREDIENTS
1 cup maida / all purpose flour
4-6 dried red chillies
2-4 cloves garlic
1 tsp fennel seeds
1 tbsp hot oil
A pinch of baking soda (optional)
An inch of ginger
Water as required
Salt to taste
Oil for frying
METHOD
Gring red chillies,fennel seeds,ginger ,garlic with 1/4 cup water.Strain it,discard the residue and keep the liquid aside.
Add hot oil,salt,baking soda and the ground mixture liquid to maida and make a soft dough.Let it set for 30 mins.
Make equal sized balls,roll out the dough as thin chapathis and make small diagonal cuts.
Deep fry in oil until the bubble ceases and turns golden orange in color.
Cool down and store in an airtight container.
TAKE CARE TIPS
Adjust masalas as per your requirement.
Knead the dough well to make soft ,smooth dough.
Roll out the dough thin to yield crispy diamond cuts.
Fry them under low – medium flame.High flame frying makes them soft and soggy.
