Tindora fry / Kovakai fry recipe

A variety of recipes can be prepared with tindora/kovakai in indian cooking.It is also prepared with other veggies like potato,raw plantain and brinjal.Kovakai tastes so good when made into kootu with pulses and coconut that enhances the taste of the kootu.Some add kovakai in making AVIYAL along with other veggies.I have shared here a simple stir fry using Kovakai with very few ingredients that cooked be prepared within 15 mins and tastes great with dhal and sambar for lunch.

PREPARATION TIME : 5 MINS

COOKING TIME : 10 MINS

SERVES : 2

INGREDIENTS

150 g tindora / kovakai

1/2 tsp mustard seeds

1/2 tsp urad dhal

1/2 tsp turmeric powder

1 tsp chili powder

3/4 tsp coriander powder

1/4 tsp cumin powder

2 tbsp oil

A sprig of curry leaves

Salt as required

METHOD

Wash kovakai, cut both the ends ,discard it and cut it into rounds .

Heat oil in a pan,add mustard seeds,urad,curry leaves and let it splutter.

Add the chopped kovakai and saute for 2 mins in low flame.Then add chilli powder,turmeric powder,cumin powder,coriander powder,salt and saute for 10 mins in low flame.

Switch off the flame when the kovakai is cooked well.

Serve for lunch with Dhal or Sambar.

TAKE CARE TIPS

Do not get tempted to increase the flame while frying for they won’t get cooked well and also will get burnt.

Buy firm green ones and avoid pale colored ripe ones.
