Paruppu Podi (with garlic)

Paruppu Podi is variety of dhals mixed with few other ingredients like curry leaves,garlic,sesame seeds,cumin,pepper are added to make it more flavorful and healthy.The addition of garlic enhances the taste and flavor of this podi.Homemade paruppu podi are always the best for we can adjust the spice level as per our family requirement and also use quality ingredients.
The ingredients are dry roasted in low flame and ground to coarse powder.Paruppu podi is usually served with hot steamed rice with ghee or sesame oil.You can store them in an airtight container at room temperature for 2-3 months.

PREPARATION TIME (Roasting the ingredients): 30 MINS

INGREDIENTS

1/2 cup pasiparuppu (moong dal)

1 cup pottukadalai (roasted gram)

2 tbsp bengal gram

2 sprigs curry leaves

5-7 red chillies

5 garlic pods

1 tsp cumin

1/2 tsp whole pepper

1 tbsp sesame seeds

Salt as required

METHOD

Dry roast the pulses in low flame in a pan or kadai until they turn mild orange in colour.

Dry roast the curry leaves,sesame seeds,pepper,cumin in low flame for 5 mins.

Then dry the red chilies and garlic for 3 mins in low flame.Cool the roasted ingredients before grinding.

Add salt and grind to coarse powder.

Store in an airtight container and use when needed with steamed rice.

TAKE CARE TIPS

Do not get tempted to increase the flame while roasting the ingredients.

You can add 1/2 tsp sesame oil while roasting the pulses.

You can also add hing if you like that flavour.
