Chutneys are the most easiest accompaniment for all Indian breakfast recipe for they are not only healthy but very quick to prepare especially during busy weekdays and relaxing weekends.Most of the chutney varieties uses grated coconut and some pulses as the main ingredients.Nowadays lot of veggies and their peels are also used in making chutneys thus making it more healthy and delicious.The chutneys made with veggies are so creamy in texture and the hues they give makes it look very appealing.
Today I would like to share a bright coloured vegetable chutney using carrots that could be made in a jiffy.I used to make this often for my son when he was small without chillies and garlic.But now I prepare them with all spicy stuffs to make it more hot and tasty.Kids love to have this chutney especially for the colour and texture that is very similar to ketchup.This way one could easily incorporate carrots in our daily menu.I have used dried red chillies for it gives nice color to the chutney ,instead you can also use green chillies.Do make this healthy Carrot chutney at home and have a healthy meal .

SERVES : 2
1/2 cup grated carrots
1/2 cup grated coconut
3 cloves garlic
2 tbsp roasted bengalgram
3 dried red chillies
1/2 tsp mustard seeds
1/2 tsp urad dal
2 tsp oil + 2 tsp oil for tempering
Salt to taste
Water as required
Saute the garlic and red chillies for 2 mins in oil in low flame.
Now add grated carrots and saute for 2 mins in low flame.Switch off the flame and cool the mixture.Transfer it to your mixer.
Add coconut,bengal gram,salt and grind.
Finally add water and grind to a fine paste.
Heat oil,add mustard seeds,urad dal and when it splutters add it to the chutney.
Serve the healthy Carrot chutney with your favorite breakfast.
