Ugadi is the New Year’s day for the Telugu people.The word ‘Ugadi’means beginning of an era.People make this popular Ugadi pachadi which is a mixture of six tastes(shadruchulu) like sweet,salt,bitter,sour,spicy and tangy,it signifies that life is a combination of ups and down and the day is started with this Pachadi.
It is traditionally prepared with jaggery,tamarind,salt,chillies,cucumber,neem flowers and raw mango.There are lot of variations people follow in making this Pachadi.Adjust the taste as per your preferences .A healthy and refreshing pachadi that doesn’t require any cooking and is so perfect for summer.

1/2-3/4 cup jaggery
1/2 cup mango (chopped)
1/2 tsp neem flower
1/2 cup cucumber (chopped)
3 tsp tamarind pulp
1/4 tsp salt
1/2 tsp chopped green chillies
3 cups water
Soak tamarind and jaggery in water for 20 mins.Extract the juice and discard the residue.
Add salt,green chillies,mango ,cucumber and neem flowers.Mix them and serve.
