Kaadai Kulambu

Kaadai / Ullan is a small bird known as Quail in English.It looks more like a pigeon and weights about 150-200 grams.There is not much flesh in their body as they are small in size and the meat is so tender and gets cooked in few minutes.It can be prepared the same way how we cook chicken at home,you can also pressure cook them for 2-3 whistles if you are in a hurry.I always prefer cooking Non-veg recipes with freshly ground spices for they give out such a flavour,colour and aroma to the dish.And the addition of coconut milk enhances the taste and gives creamy consistency to the kulambu that makes it perfect to go with breakfast items and hot steamed rice.Do try this simple recipe and my KAADAI MASALA FRY at home for your loved ones.

PREPARATION TIME : 5 MINS

COOKING TIME : 10 MINS

SERVES: 5*

INGREDIENTS

5 Kaadai / Quail

10 shallots

1/2 tsp turmeric powder

1 1/2 cup coconut milk

2 tbsp oil

Salt to taste

TO GRIND 1

1/2 tsp fennel seeds

1/4 tsp pepper

2 cloves

1/2 star anise

1/2 tsp cumin seeds

1 tsp coriander seeds

8 dried red chillies

A very small piece of cinnamon

TO GRIND 2

6 shallots

3 cloves of garlic

A small piece of ginger

METHOD

Wash and clean the kaadai well in water for 4-5 times.Heat oil in your cooker,add shallots and saute for a min in low flame.

Then add the kaadai ,turmeric powder and saute for 2-3 mins in low flame.

Grind the items under TO GRIND COLUMN 1 .No need to roast these ingredients.

Then grind the items under TO GRIND COLUMN 2 with little water.

Add these ground items 1 and 2 to the kaadai/ quail and saute for 5 mins in low flame.

Finally add coconut milk ,salt and pressure cook for 3 whistles.

Delicious Kaadai kulambu is ready to serve now.

TAKE CARE TIPS

To make coconut milk,take 1/2 coconut and grind with 2 cups of water ,strain and discard the residue.

Wash the quail in water 4-5 times to remove that non veg smell.

Also saute them with turmeric powder to remove that non veg smell.
