Brinjal Chutney / Baingan Chutney

Brinjal Chutney,a spicy and smoky flavoured chutney from the southern parts of India that serves very well with chapathi,roti and rice.Chutneys are the most easiest accompaniment for all Indian breakfast recipe for they are not only healthy but very quick to prepare especially during busy weekdays and relaxing weekends.
Most of the chutney varieties uses grated coconut and some pulses as the main ingredients.Nowadays lot of veggies and their peels are also used in making chutneys thus making it more healthy and delicious.The chutneys made with veggies are so creamy in texture and the hues they give makes it look very appealing.Do make this healthy Brinjal chutney at home and have a healthy meal.

SERVES : 2

INGREDIENTS

2 medium sized Brinjal

1/2 onion chopped

1/2 tsp ginger garlic paste

1/4 tsp cumin seeds

1/4 tsp mustard seeds

1/4 tsp urad dal

1/4 tsp red chilli powder

1/4 tsp turmeric powder

Salt to taste

METHOD:

Roast the brinjal on stove top until the peel leaves and the flesh inside becomes soft and mushy.

Immerse in water and remove the skin completely.

Heat oil in a pan,add urad dal,mustard seeds,cumin seeds and let it splutter.Then add ginger garlic paste,onions and saute for 2 mins.Now add turmeric powder,chilli powder,salt and saute for a min in low flame.Mash the brinjals to soft and smooth paste,then add it to the sauteed onions.

Cook for 4-5 mins in low flame and switch off the stove.

Serve them with roti,rice or chapathis.
