Thandai is a traditional Indian drink made with dry fruits,raisins ,saffron,milk with few spices on Holi,the festival of colors🌈.The word ‘Thandai‘means cool,it is a coolant drink with ingredients that has cooling effect on our body.A very healthy refreshing drink for summer and easy to make at home.
There are so many versions oh making thandai,I have shared here an easy method where all the ingredients are soaked for 4-5 hours and then ground to smooth paste with milk .You can also dry grind the ingredients (without soaking)if you want to store them for later use.
I have skipped poppy seeds in this recipe ,also you can add gulkand for dried rose petals or just add rose essence for flavour.Thandai is usually serve chill,garnish with nuts, saffron or rose petals before serving .

SOAKING TIME : 5 HOURS

INGREDIENTS
6 badam/almonds
8 pistachios
6 cashews
2-3 cardamoms
2 tsp melon seeds
2 tsp dried rose petals
1/4 tsp whole pepper
1/4 tsp saunf/fennel seeds
1 tbsp raisins
2 tsp sugar
Few saffron strands(soak in milk for 10 mins)
METHOD
Soak all the ingredients for 5 hours.Soak saffron strands in warm milk for 10 mins.
Grind all the ingredients using 2 tbsp water + 2 cups full cream milk +2 tsp sugar.
Strain the Thandai and discard the residue.Add the saffron milk and refrigerate for an hour
Garnish Thandai before serving .
