Milk Cake / Paal Cake Recipe

Traditional Indian milk sweet prepared from thickened milk that is curdled with lemon juuce and finally sweetened with sugar.Very time consuming recipe ,where the milk is reduced and thickened to half with continuous stirring for almost 2 hours.This sweet has a grainy ,fudgy texture from the lemon juice and the sugar caramelises and gives the sweet golden color.Do try this rich and royal delicacy that is so delicious and addictive 😊





2 litres full cream milk

1 cup sugar

Juice of one lemon


In a heavy bottomed pan, heat milk on medium flame and keep stirring occasionally.

Cook until the milk is reduced to half its quantity, this takes more than 90 mins.

Mix lemon juice with 1 tbsp water and add it to the thickened milk mixture and stir gently.The milk would start to curdle now.

After 2 mins, add sugar .Sugar makes the mixture bit watery just keep stirring on low flame.The mixture turns golden brown as the sugar caramelises.

The mixture thickens and leaves the sides of the pan.

Transfer the mixture to a greased pan .

Let it set for 20 -24 hours.Separate the sides of the pan with a knife,reverse and unmould the cake.Cut them into small pieces.
