Badam Milk | Almond Milk Recipe

Badam milk is a very popular milk beverage with ground almonds and flavored with cardamom and saffron. A very healthy protein rich drink with the goodness of almonds. The almonds need to be soaked overnight or 2-3 hours in hot water. This makes it easier to remove the skin and also to grind them to a very fine paste. Badam milk is traditionally made by simmering full fat milk until it reduces to slight thicker consistency. Very easy to make recipe except the milk preparation takes 20-30 mins. This recipe can be easily made in huge batches and served as dessert for your special guests this Diwali.

SOAKING TIME : OVERNIGHT OR 3-4 HOURS IN WARM WATER

PREPARATION TIME : 10 MINS

MAKING TIME : 30 MINS

INGREDIENTS

1 liter full fat milk

1/2 cup almonds

1/2 tsp cardamom powder

8-10 tsp sugar

1/4 tsp saffron strands

METHOD

Soak the almonds overnight in water. Remove the skin and grind to fine smooth paste with 1/4 cup water or milk and keep it aside. Boil the milk in a thick bottomed vessel and simmer it for 20 -25 mins until it reaches a slight thicker consistency. Then add the sugar, cardamom, and saffron and stir well. Then finally add the badam paste and cook for 2 mins on low flame. Switch off the stove and let it set for 15 mins. Serve Badam milk warm or chilled. Delicious homemade Badam Milk. almond milk
