Chicken Thigh Roast Recipe

A simple chicken roast recipe that is moist ,delicious and quite easy to prepare.I have no particular method ,I just grind some fresh masalas using basic everyday ingredients.An easy chicken roast recipe that is full of flavor and spices perfect for spicy lovers.This marinating masala has no artificial color or flavoring but it gives the best taste and color to the chicken.
Best comforting Sunday lunch recipe when you are feeling bored to cook but still want to have good food for lunch.Just marinade the chicken pieces the night before and refrigerate it.Let it sit at room temperature for 45 mins before roasting.You can also use this chicken in wraps and salads.Serve along with steamed rice and rasam that makes this an awesome non veg Sunday meal.




10 fresh chicken thigh pieces / chicken drumsticks

20 dried red chillies

9 cloves garlic

Small piece of ginger

2 tsp coriander powder

1 tsp cumin powder

3/4 tsp turmeric powder

3 tbsp curd

Juice of 1 lime

Salt to taste

Water as required

Oil for frying


First dry grind the red chillies,then add ginger,garlic and grind without water.

Now add turmeric powdeer,cumin powder,coriander powder,lime juice,curd,salt and grind with little water.

The masala for marinating is ready now.Rinse chicken and pat dry,marinate the chicken pieces with this paste and keep aside for at least 4 hours.

Heat oil in a kadai and deep fry the chicken pieces until well cooked in low flame.

So simple ,tender and delicious !


Deep fry the chicken pieces in low flame,do not get tempted to increase the flame.
