Banana Bread Recipe

YIELD : MAKES ONE LOAF

INGREDIENTS

2 cups maida

2 overripe bananas

1/2 cup butter

1 cup sugar

1/4 cup milk

2 eggs

1 tsp baking soda

1/4 tsp salt

1 tsp vanilla essence or extract

2 tbsp chopped walnuts (optional)

METHOD

Preheat the oven to 180°C, and butter a 9 × 5 inch loaf pan.

Sift the flour, bicarbonate of soda and salt into a large mixing bowl.

Powder the sugar.

Mix the flour,baking soda,salt and keep it aside.In a separate bowl, cream the butter and sugar together until light and fluffy.

Using a fork, mash the bananas.Add the eggs, mashed bananas, and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture. Add milk and make a smooth batter without any lumps.

Pour the cake mixture into the tin and sprinkle with some nuts.Bake for 55 minutes to 1 hour or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool for few minutes, then transfer onto a wire rack to cool completely before serving.
